At 7:15 yesterday morning, I opened the little basement door under our back stairs and got hit with that cold, earthy smell that tells me the vegetables are still behaving themselves.
It was 34 degrees outside in Tennessee, the wind was rattling the metal roof on the old barn, and I had a bucket of potatoes sitting on the kitchen floor that needed to be put away.
Three years ago, I would've thrown them in a cardboard box and called it good.
That would've been a mistake.
I've learned the hard way that how to store potatoes, onions, and root vegetables all winter isn't really about having some perfect old-fashioned root cellar with stone walls and a wooden door. Most of us don't have one of those.
What matters is controlling a few simple things: temperature, moisture, darkness, airflow, and how carefully you handle the vegetables before storage.
I've ruined potatoes by storing them too warm. I've had onions rot because I thought a cool shed was automatically a dry shed. I've pulled carrots out of a box in February that looked perfectly fine until I touched them.
And I've learned that you don't need expensive equipment to do this.
You need the right vegetables in the right place.
Start With The Room
When we bought our five acres, the house came with a basement that looked like somebody had abandoned it halfway through a project.
The walls were rough. The floor wasn't exactly pretty. There was an old shelf along one side that had probably been built sometime before I was born.
It wasn't much.
But it turned out to be more useful than I expected.
My first winter, I put potatoes, onions, carrots, and sweet potatoes down there together because I figured, well, they're all vegetables. They'll be fine.
They weren't.
The potatoes did reasonably well. The onions weren't terrible. The carrots started getting soft. The sweet potatoes were miserable.
That's when I started paying attention to the fact that "root vegetables" isn't really one storage category.
Different crops want different conditions.
For potatoes, I want a cool, dark, reasonably humid place with some airflow. I don't want them sitting beside the wood stove, and I definitely don't want sunlight hitting them.
Onions are different. They like it much drier.
Carrots, beets, turnips, and parsnips generally appreciate cooler, humid conditions, especially when they're stored in something that prevents them from drying out.
That distinction made a bigger difference than buying any fancy storage container.
If you have a basement, use it.
If you don't, look at an unheated closet, pantry, insulated garage area, basement corner, crawl-space storage area, or another place where temperatures stay relatively stable.
Don't choose a location just because it's cold.
Stable beats extreme.
A place that swings from 35°F at night to 65°F during the afternoon isn't doing you any favors.
And don't store your vegetables right next to your furnace, water heater, wood stove, dryer, or other heat source.

Potatoes Need Darkness
Potatoes are probably the easiest crop to store badly.
I know because I did it.
My first serious potato harvest went into a couple of plastic tubs with loose lids. I put them in a storage room where there was a small window.
Not bright sunlight.
Just enough daylight to make the potatoes unhappy.
A few weeks later, I noticed green patches.
I dumped the whole batch.
Potatoes should be stored somewhere dark and cool, with enough ventilation to prevent excessive moisture buildup.
The green color isn't something I try to eat around. I don't treat green potatoes as a cosmetic problem.
After harvesting, I don't immediately wash potatoes.
I knock off loose dirt gently and let them cure in a dark, protected place with good airflow.
Curing gives the skins time to toughen before long-term storage.
Mine usually spend roughly a week or two curing, depending on weather and how wet they came out of the ground.
The key is handling them gently.
A potato that gets bruised during harvest may look perfectly healthy today and turn into a soft, rotten mess later.
That's why I don't dump potatoes into a wheelbarrow from shoulder height anymore.
I've gotten less enthusiastic about throwing things around as I've gotten older anyway.
For long-term storage, I use shallow crates or cardboard boxes with ventilation rather than packing potatoes into a giant sealed plastic container.
You want air movement without blasting them with dry air.
And I check them.
Not every morning. I'm not that organized.
But every week or two, I'll look through the potatoes and remove anything that's getting soft, leaking, or obviously rotten.
One bad potato can make a box smell like something died under your porch.
Onions Want It Dry
This is where I see people make the opposite mistake.
They hear "cool storage" and assume onions belong in the same damp environment as carrots.
Nope.
Onions like dry storage with good airflow.
Before I store onions, I cure them thoroughly.
The neck needs to dry down, and the outer skin should become papery.
I spread mine out in a single layer somewhere protected from rain and direct sun, with plenty of airflow.
I've used an old screen door laid across two sawhorses.
I've used shelves.
I've even used the dining room floor when the weather refused to cooperate and my wife wasn't home to object.
That last method is not recommended as a permanent household strategy.
Once the onions are properly cured, I move them into mesh bags, wire baskets, crates, or something else that lets air circulate.
I don't pile them ten inches deep.
I don't seal them in plastic bags.
And I don't store them underneath damp potatoes.
If your onions start developing soft spots or a strong rotten smell, investigate immediately.
One rotten onion has an impressive ability to make several innocent onions look guilty.
Carrots Are Different
Carrots are one of the crops that taught me the biggest lesson about storage.
They don't want the same dry environment as onions.
Fresh carrots lose moisture quickly once they're harvested, especially if the tops are left attached.
So I remove the green tops, leaving the carrot itself intact.
I don't scrub them spotless.
A little dirt isn't a problem.
Then I pack the carrots in a container with a moisture-holding medium.
I've used slightly damp sand and containers filled with other suitable packing material.
The goal isn't to make the carrots wet.
That's a common misunderstanding.
You want a cool, humid environment that slows moisture loss without creating a swamp.
I check the packing material occasionally.
If everything is bone dry, the carrots can shrivel.
If it's soaking wet and there's no airflow, rot becomes a bigger concern.
It's a balancing act.
That's really what winter vegetable storage is: keeping a bunch of living plant material in a state where it doesn't dry out, sprout, freeze, or rot before you can eat it.
Beets And Turnips
Beets are pretty forgiving compared with some of the other vegetables.
I remove the greens, leave a little stem, and store the roots in cool, humid conditions.
Turnips and rutabagas get similar treatment.
The greens are useful, but I don't leave them attached during long-term storage because they'll continue pulling moisture from the root.
This is one reason I don't harvest everything at once and dump it into one enormous pile.
I separate crops as soon as possible.
Here's roughly how I think about the vegetables on our place:

That last row is worth paying attention to.
Sweet potatoes aren't potatoes when it comes to storage.
I made that mistake my first year.
Sweet potatoes don't appreciate the cold conditions that ordinary potatoes do. They need warmer curing and storage conditions.
If you have room to keep different vegetables in different areas, do it.
If you don't, prioritize the crops according to their actual storage requirements rather than trying to make everything fit one imaginary "root cellar temperature."
The Temperature Problem
Here's the part that sounds simple until you live through a Tennessee winter.
Cold weather doesn't mean consistent weather.
We can have a stretch where it's below freezing at night, followed by a warm afternoon when you wonder if winter forgot what season it is.
That makes an unheated shed tricky.
If vegetables are going to freeze, that's a problem.
Once frozen vegetables thaw, their texture can change dramatically, and you can end up with mush where you expected something you could roast for dinner.
A basement or insulated storage area gives you a buffer.
I don't obsess over keeping my storage room at exactly one magic temperature.
Instead, I pay attention to trends.
If it's been unusually warm outside for several days, I know the storage space is probably warming too.
If a hard freeze is coming, I make sure nothing vulnerable is sitting against an exterior wall or in an unprotected shed.
You don't need a laboratory.
You need a cheap thermometer.
I keep one in the storage area so I know what's actually happening instead of guessing.
That's one of those $10-ish improvements that has saved me more food than a lot of the expensive homesteading equipment I've bought.
Don't Store Damaged Roots
This is one of the least exciting rules and one of the most useful.
Before anything goes into long-term storage, I sort it.
Anything badly bruised goes into the kitchen.
Anything cut gets used soon.
Anything suspicious gets separated.
The best-looking vegetables get the best storage space.
I used to think that was wasteful.
Then I learned that putting one damaged potato into a crate with 40 good potatoes is a much better way to waste food.
The same applies to carrots, beets, turnips, and onions.
Storage isn't a miracle cure.
If a vegetable is already starting to rot, putting it somewhere dark doesn't stop the process.
It just makes the eventual discovery smell worse.
I make a separate "eat first" basket.
Those vegetables become mashed potatoes, roasted root vegetables, soups, stews, hash, onion soup, carrot cake, or whatever else needs using.
That's where having chickens helps too.
Some vegetable scraps go straight to the flock, depending on what they are and how they're prepared.
The chickens have never complained about the quality-control department.
My Biggest Storage Mistake
My worst storage mistake wasn't temperature.
It was confidence.
I had a beautiful harvest of onions one year. They cured well. The skins were dry and papery. They looked fantastic.
So I put them all into one large container and forgot about them.
About six weeks later, I noticed the smell.
One onion had rotted.
Then another.
The problem was that the onions were packed too tightly for me to notice what was happening.
I pulled everything out and found several bad ones buried in the middle.
I lost a frustrating amount of food.
Now I use smaller containers.
It takes more shelf space, but I can see what's happening.
If one container starts smelling wrong, I can deal with it without tearing apart the entire storage area.
If I could go back to my first year, I'd spend less time worrying about finding the perfect storage container and more time making sure I could actually inspect everything easily.
That was the lesson.
Storage needs to be practical enough that you'll maintain it.
What About Apples?
Here's the skeptical question I eventually asked myself: "If apples can be stored for months, why can't I just put everything together?"
Because different produce gives off different gases and has different storage requirements.
I don't treat the storage room like one giant produce drawer.
Apples get their own consideration.
Potatoes aren't something I want sitting in a pile with everything else.
Onions need dry conditions.
Carrots need humidity.
This is why old-fashioned root cellars often had different areas, shelves, bins, or compartments.
You don't necessarily need to build separate rooms.
You just need to stop thinking of your storage area as one environment.

What I Actually Use
I didn't go out and buy a $2,000 root cellar.
Most of what I use came from things we already had or inexpensive supplies.
For potatoes, I've used cardboard boxes, wooden crates, and ventilated plastic bins.
For onions, mesh bags and wire baskets work well.
For carrots and beets, sturdy containers are more useful because I want to hold the packing material around the roots.
A cheap thermometer is worth having.
So are labels.
This sounds ridiculous until you're standing in a dark basement in January trying to remember whether the crate in front of you contains Kennebec potatoes or the ones you harvested from the other bed.
I label the date and variety.
That also teaches me which varieties actually store well in my particular conditions.
That's more useful to me than somebody else's list of "best storage varieties."
Your climate, soil, harvest timing, storage room, and growing conditions all matter.
Check Them Regularly
Don't put the vegetables away in October and assume you're done until March.
That's how you get a basement full of compost.
I check my stored vegetables every week or two.
Sometimes it takes five minutes.
Sometimes I'll pull out a whole crate and reorganize it.
I'm looking for:
* Soft spots
* Mold
* Sprouting
* Excess moisture
* Shriveling
* Rotten smells
* Condensation
* Evidence of rodents
The rodent problem deserves its own paragraph.
If you live somewhere rural, assume mice will eventually discover whatever food you've stored.
I learned this after finding little teeth marks on a cardboard box.
Cardboard is convenient.
It's not mouse-proof.
I now keep anything especially vulnerable in sturdy containers or in an area where I can monitor it.
You don't need to turn your basement into Fort Knox.
But don't give a mouse an all-you-can-eat buffet and then act surprised when it shows up for dinner.
Don't Wash Everything
This one feels wrong if you're used to supermarket vegetables.
Supermarket potatoes are clean.
Your garden potatoes may have half your garden stuck to them.
That's okay.
For long-term storage, I generally don't wash potatoes before storing them.
I let them dry and gently brush off loose dirt.
Washing introduces additional moisture, and moisture is exactly what I don't want sitting around on stored potatoes.
Carrots and other root vegetables are similar.
I don't need them looking like they belong in a grocery-store display.
They need to survive.
There's a difference.
When Things Start Sprouting
Eventually, something will sprout.
Don't panic.
Sprouting doesn't automatically mean the entire storage crop is ruined.
Potatoes will naturally begin breaking dormancy as winter progresses, especially if conditions become warmer.
When I notice sprouting, I sort through the potatoes and use those first.
If they're still in good condition, they become dinner.
The ones that are clearly deteriorating don't go back into the storage crate.
This is another reason I don't store everything in one enormous pile.
A smaller batch is easier to rotate.
I also keep the oldest harvest toward the front.
Newer harvest goes behind it.
It's the same basic principle I use in the pantry: eat the oldest stuff first.
Nothing complicated.
Just actually doing it.
The Cost Is Lower Than You Think
If you already have a cool basement or similar space, vegetable storage doesn't have to cost much.
My biggest expenses were the vegetables themselves, containers, shelving, and a thermometer.
And honestly, you can improvise a lot.
An old bookshelf can become storage shelving.
Milk crates can become ventilated containers.
Cardboard boxes work for some things.
Wooden crates can be excellent.
The mistake is thinking that traditional food storage requires traditional architecture.
It doesn't.
A root cellar is just a solution to a temperature, humidity, darkness, and airflow problem.
You can solve those problems in other ways.

If you're building something specifically for food storage, spend your money on insulation, ventilation, rodent resistance, and temperature monitoring before spending it on decorative doors or fancy woodwork.
Your vegetables don't care what the door looks like.
The Freezing Question
"Yeah, but what if my storage area freezes?"
Then move the vegetables.
Seriously.
Don't get sentimental about the storage location.
I've had winters where the weather made one part of the property useless for storage.
A shed that worked beautifully during a mild winter wasn't appropriate during a hard freeze.
If temperatures are dropping toward freezing, I check the thermometer rather than guessing.
For vegetables that can't tolerate freezing, I move them into a more protected space.
Sometimes that's inconvenient.
But losing 30 pounds of potatoes because I refused to carry two boxes inside would be considerably more inconvenient.
If your only storage space is vulnerable to freezing, an insulated cabinet or small interior storage area may be a better solution than trying to turn an outdoor shed into a root cellar.
What I'd Do Today
If you were standing here on my porch asking me how to start this year, I wouldn't tell you to build a root cellar.
I'd tell you to start small.
Grow or buy a reasonable amount of potatoes, onions, carrots, and beets.
Harvest them carefully.
Cure the potatoes and onions properly.
Remove carrot and beet tops.
Sort everything.
Then find the coolest, darkest, most stable place you already have.
Put a cheap thermometer in there.
Separate the crops according to their needs.
And check them every week or two.
That's it.
Don't buy 200 pounds of potatoes because you read somewhere that a proper homesteader should store a year's worth of food.
Store what you can realistically monitor and eat.
Last winter, I was standing in the basement with dirt under my fingernails, pulling a handful of carrots out of a box while the wood stove upstairs was smoking because the wind had shifted.
It wasn't glamorous.
There wasn't a beautiful farmhouse kitchen involved.
But those carrots went straight into a pot of chicken soup that night, and most of the potatoes we'd grown months earlier were still sitting there waiting for us.
That's the part I like.
You don't need to become some perfectly self-sufficient homesteader overnight.
You just need to learn how to keep the food you've already worked hard to grow.
Start with one shelf.
Get that right.
Then add another.
